Appalachia is shaped by water. It begins in cool mountain springs, gathers in winding creeks, and travels through fertile river valleys before eventually reaching the Gulf. Along the way, it nourishes gardens, forests, wildlife, farms, and generations of people.
This journey is the inspiration behind The Watershed Menu, the first chapter in Wilder’s new Appalachian Nature tasting series.
Appalachian Nature is an evolving dining experience inspired by the landscapes, seasons, and foodways of our region. Each menu explores a different expression of Appalachia through ingredients, traditions, and the natural forces that have shaped life here.
Across ten courses, Watershed follows the path of water through the region. The evening begins with preserved trout, cornbread, and wood-grilled mushrooms before moving through High Country bread, grilled oysters, vegetables from the garden, wood-fired quail, Gulf fish, charred venison, muscadines, benne, and more.
Each course reveals another part of the landscape. Fire, preservation, seasonality, and a deep sense of place guide the menu, while thoughtful details connect the mountains of Appalachia to the waters beyond them.
Limited to only 12 guests per night, Watershed offers an intimate opportunity to experience Wilder in a new way. The evening is unhurried and immersive, allowing each course, and the story behind it, to unfold at the table.

The Appalachian Nature menu experience is a carefully composed tasting menu in which each course is connected to the story as a whole. We will be happy to accommodate many standard dietary restrictions with advanced notice; however, due to their essential use throughout the menu, we are unable to accommodate mushroom, nightshade, or allium restrictions. Additionally, this menu will not be available to vegetarian or vegan diners. Menu offerings may change based on the season and the availability of ingredients.
