A family tradition.
Steve and Mary Ellen Brewington (above left) have a true love for the 600 acres on which Windy Hill Farm and Preserve sits. Mary Ellen's father first purchased the farm and built a home there in the year 2001. Their three children Sam, Steven and Nell practically grew up here spending summers working the farm as well as hunting quail and fishing in the Tennessee River.
After completing his degree at the University of Tennessee, Steven (above right with wife, Allie) took over management of the property. Steven has worked hard to restore sustainable and responsible farming while developing a true wildlife habitat. Having spent many summers here as a boy working with his grandfather, he learned early on about his passion for the land.
It is the family's hope that you will fall in love with this slice of East Tennessee heaven the way they have.
Prescott Stone, Assistant Farm Manager
With Windy Hill since 2017, Prescott got his degree in Environmental Soil Sciences from the University of Tennessee. He loves working with the animals and restoring the wildlife habitat. He's also an amateur photographer.
Jack Bailey, Lead Hunting Guide
Jack has been guiding quail hunts for 20-plus years. He has worked with
5 lodges in three states (AL, KY, TN) as well as grouse hunts in Michigan. He has run dozens of bird dogs over the years and knows how to put guests on great birds.
Marlee Harris, Hospitality Manager
Marlee joined the Windy Hill team in January 2021 at the early stages of development for our new concept and brings with her a sincere dedication to the guest experience. In Marlee's words, her heart for hospitality began when her first dinner party guests were dolls and stuffed animals. Inspired by her grandmother's ability to turn garden fare into a delicious family meal, and her mother's ability to create a feeling of home for any guest, Marlee's career in hospitality felt more than natural. She has been creating exceptional experiences for guests in and around the Knoxville area for nearly a decade and is excited to bring the service philosophy she has developed to our guests. Marlee offers a passion for earnest connection, sustainable living, regional cuisine, and remarkable moments.
Ben Warwick, Executive Chef
Chef Ben was introduced to the culinary world as a line cook at the age of 18 and never looked back. He’d found a way to channel his creative energy and drive for excellence, fell in love with the fast pace and appreciated the friendships developed within the kitchen. Chef Ben continued a significant education on the job at Knoxville staples including Cha Cha, The Orangery, and Cherokee Country Club. From line cook to executive sous chef, he continued to refine his palate and culinary perspective in a way that creates meaningful, memorable experiences for diners. An East Tennessee native, Ben relishes the opportunity to highlight the unique food culture this region has to offer. At Windy Hill, Ben’s seasonal, farm and garden-to-table menu will nourish, interest, and educate eaters on all we have to offer.
